ABOUT OUR GOURMET FOODS
Most of out gourmet foods are flash frozen to ensure unbeatable and maximum quality. Firstly, flash freezing is a method, where the food is instantaneously frozen using a very cold blast of ice. Therefore this does not effect the texture and taste of the food once ready to cook. Our seafood and fish are either frozen at sea, or once they have been landed and are therefore as fresh as the day, if not moment, they were caught or landed. For example, once the freshly frozen tuna steaks have defrosted, there is only a wonderful, sea fresh aroma and no other aromas, which indicates freshness.
Ask yourself this, is ‘fresh fish’ really that fresh? On many occasions, it appears not. It could have been on display for a few days, then if not sold it could be frozen and sold at a later date! Our seafood and fish is ‘freshly frozen’ ensuring optimum quality.
Our organic meat is mainly frozen. This is done at a very critical stage, once the meat has matured. It is frozen after 3 weeks of been hung on the bone (maturing), therefore ensuring that it has all the flavour and texture locked in, at this critical stage. Many meat suppliers will sell fresh meat, only for it to be too ‘fresh’. This means that it has not had any time to mature properly unlike the meat we use. It’s the old story, supply and demand, and the ‘conveyor belt’ approach many meat suppliers have. Rear the animal as fast as possible and to yield as much meat as possible, slaughter and pack, then straight onto the shelves for sale. Here at Jake’s, we believe that the animals we use should be reared with a good standard of living. That is why the organic animals we use are free to roam lush pastures and eat grass and herbs all day long. The meat is then left to hang for 3 weeks to make the flavour intense and the texture very pleasing upon the bite. The Atlantic salmon are reared in fast flowing waters, to give them as natural environment as possible. Yes, it is a very slow process, but take note of the old adage, “all good things come to those who wait” and all this waiting leads to very tasty food. We make sure we secure the most superior and succulent steaks, the finest salmon, the best lamb and pork for you to enjoy at home. In short it is what all of our previous generations have enjoyed, before the use of mass farming and genetically modified produce. As natural as possible. After maturing the meat is skilfully hand butchered and packed into neat vacuum packages. This ensures the meat or seafood is kept in optimum condition and locks in all that goodness and flavour!

ABOUT OUR ORGANIC RANGE
Our organic range is sourced only from the U.K, mainly Wales and Scotland, ensuring it is all traceable. It has won many ORGANIC FOOD AWARDS and TASTE AWARDS. We use only native breeds of cattle, such as the Welsh Black and the Hereford cattle and we try to use only traditional breeds of pig, such as the Saddleback and the Gloucester Old Spot. This plays a big part in ensuring that the texture and flavour are excellent. All have been slaughtered at organically approved slaughter houses and hung on the bone to mature for around 3 weeks. ABOUT OUR GAME
Our venison, boar, pigeon and pheasant are all wild. These are shot in season and only taken from sustainable sources. It is the finest of game and is frozen after maturing (if required) to ensure the highest of standards. May contain some shot.

 

ABOUT OUR SMOKING PLANKS
This is the new and exciting way to cook out doors. This method was first used on the American pacific coast hundreds of years ago. It has now been tailored to use on the home barbeque. Jake brings this method to your own back yard grill, for you and your guests to enjoy. It gives your food a smoky flavour and keeps it succulent throughout cooking. You don’t even have to turn your food once! Simply pop it into any gas or charcoal, kettle style barbeque and wait until it starts to smoke lightly. Place your food directly on top of the plank, close the lid and let the smoke work its magic. Once cooked (stated in the guide) lift the lid and enjoy. Comes supplied with 24 fabulous recipes in a booklet, including seafood and fish, game, meat, vegetables and even frogs legs! Full instructions supplied. Re-useable up to 6 times.
