The Smoking Pro is the complete set up. You can use hardwood logs (which is ideal and very cost effective, not to mention that it gives your food the very best possible flavours if you can aquire them), or charcoal on this fabulous smoker. Comes supplied with the Side Fire Box for texas style smoking. The barrel design is one of the best tried and time tested around. In our terms the Americans no longer just BBQ, to them BBQ is considered smoking. And this is a true way of getting that real smoke flavour to your food. It can be used with charcoal as with a conventional BBQ, for direct or indirect cooking. Or hardwood logs can be used when using the Side Fire Box (pictured on the left of the illustration). Simply sear your food over the hot logs in the Side Fire Box (it has a cooking grill!) when cooking spatchcock or whole chickens, whole turkeys, large cuts of game, lamb roasts, hams, duck, ribs, pork roasts, briskets etc and then transfer the food the main cooking grill and allow to cook through. There's no need to turn any of your food as the smoker cooks like a big oven, indirectly. The heat and smoke is transfered from the Side Fire Box to the main cooking chamber. This allows a real true 'low and slow' cooking method allowing that smoke time to penetrate the food, all the time keeping it moist and succulent. If smoking for long periods of time, such as for pulled pork, whole turkeys or 'low and slow briskets' then simply add unlit logs at intervals by sliding out the Side Fire Box draw to easly maintain the heat without losing it in the main chamber. |
